(VS) "The Globalization of East Asian Cuisines"

East Asian cuisines are popular in many parts of the world, and the globalization of individual dishes, ingredients, and recipes is closely linked to migration. Focusing on how the globalization of East Asian cuisines has transformed food cultures both outside and within East Asia, this course examines the nexus of mobilities of people, food, and knowledge since the second half of the 20th century. Drawing on English-language literature, we will analyze case studies of the globalization of food and cuisines from and within different East Asian countries and regions to compare culinary mobilities within and outside East Asia and examine what is at stake in the globalization of cuisines and for whom. This course is open to students in the Global East Asia MA program. East Asian language skills are not required. close
